Zucchini Pancakes - the Evo way:

Grate the zucchini into a small bowl
Finely chop the spring onion and mix with the zucchini
Add the  egg to the bowl and mix thoroughly adding salt and pepper to taste
Heat oil in a non stick frying pan
Add 3 spoonfuls of the zucchini mixture to the pan and fry until lightly browned, pressing down to flatten
Flip pancake until browned on both sides


1 medium size zucchini
1 medium size spring onion
1 large egg - organic
2 tablespoons of coconut oil
Salt and pepper to taste
