Prawn Avocado Mango Salad - the Evo way:

Make the dressing by  mixing the lime juice, oil and chili pepper
Mix all other ingredients together in a large bowl and dress with oil mixture
Serve on a bed of rocket and spinach or other leaves of your choice
Season and garnish as desired

Ingredients:

12 large cooked prawns
¼ cucumber – finely chopped
½ avocado, chopped
1 Mango – peeled and chopped
1oz unsalted cashews
1 teaspoon olive oil
1 fresh chili pepper (or chili flakes)
Juice of half of a lime
